Personally I would do it like that

Title : Blade Runner: The Final Cut
Original Title : Blade Runner
Edition : Two-Disc Special Edition

Is this what you mean by subtitle?

It all seems so stupid, it makes me want to give up!
But why should I give up, when it all seems so stupid?

The Final Cut and Two-Disc Special Edition is imho both Edition.

I always think the "version-description" should always be complete in Edition field. Imho not part of the title.

I'm a little in between here. 'The Final Cut' refers to the film itself, not to the DVD and Two-Disc Special Edition does refer to the DVD. The rules just say: "The Edition field is for distinguishing between DVDs, and for indicating special versions and collections." It is primary used to distinguish between different DVD editions, but whether this also counts for different film editions? I think the second part of this rule could say that The Final Cut is a special version indicator. On the other hand subtitles of sequels aren't moved to the edition field either, so...

Kino:

I have a simple answer, what does the film say. This is a legitimate questuion...I know of at least one instance where the On Screen title has been modified to include Director's Cut, this it is Title: Director's Cut.
