The Resident Evil movies aren't bad I suppose, I watched Extinction the other night and thought it was fairly good - I can't stand Apocalypse though, it just seems TOO corny. The first one is a pretty good effort, I particular enjoyed the opening scenes with the initial T-Virus release.

The Evil Dead's are excellent (and I'm kicking myself that I didn't mention them in my initial post) the first one is the definition of Zombie splatter gore and would be ace if released on hi-def (as mentioned in another post) the second is the cult fave and the third reaches into the realms of it's so bad it's good.

The Re-animator series are great too, but be sure to check out other Lovecraft adaptations as they are ace too, there are some boxsets (4 volumes at present I think) that have been released on region 1 a la Master Of Horror - short Lovecraft tales. Also From Beyond is worth a watch, even though it's not a zombie flick.

As your list states, you can't go wrong with Romero. The 'Dead' franchise is considered the pinnacle of Zombie excellence - I'd personally steer clear of the Night of the Living Dead remake though, as it's so bad it's.... terrible. [side note: if you like Romero then check out: The Crazies - fairly good, and Martin - excellent]
Also Zack Snyder's remake of Dawn is pretty good and well worth the purchase, as it presents a different spin on the shopping mall zombie fest. The remake of Day of The Dead has also been done, but I haven't seen that so cannot comment... no doubt remakes of Land and eventually Diary will someday happen.

You should seriously consider the Italian efforts though, particularly Fulci as he has contributed almost the same as Romero to the Zombie genre with The Beyond, City of The Living Dead, Zombie (AKA Zombie Flesh Eaters), House By The Cemetery....

Also there is Zombie Holocaust (pretty good), Zombie Lake (pretty good), Let Sleeping Corpses Lie (excellent), which all have merit.

Then there are the more 'tongue in cheek' efforts like the Return of The Living Dead franchise, as well as Nightmare City (which is unintentional) and also Burial Ground, Shaun Of The Dead, Children Shouldn't Play With Dead Things, Braindead etc.

As for the '28' franchise they have their merits in being fairly original, but they are an acquired taste. I personally prefer 28 Weeks to 28 Days, but do like both.

As for classics these are sparse and touch mainly on the roots of where the Zombie legends come from such as black magic and Voodoo. One of particular note is I Walked with A Zombie, which is a chilling tale of Voodoo, rather than the more modern common virus / disease outbreak scenario.

There are so many zombie films out there you're bound to find some for you, happy hunting!

This is a difficult one. If you are able to support multi region then the Millennium edition is a pretty safe bet. As you want to preferably purchase from amazon.co.uk or play, though my choice would be extremely difficult. Both cheap special editions are in no way special as they come with a measly documentary available on almost all releases. I personally own the 'Trilogy of The Dead' which is a 4 disc boxset, including the first three films and a bonus disc called the document of the dead. This is an amazing set, but ironically is let down by 'Night' which supports a fairly bad transfer and new sound editing, which can detract from the film.

This is why I have also bought the three disc Ltd Edition steelbook of 'Night' from Amazon.de:

This is an excellent set, and certainly compensates for poor edition in the 'Trilogy', but because it is German it does contain German language on the back of the tin, as well as no English subtitles. This is no problem for me as I buy a lot of my films from Germany, I am a particular fan of the X-Rated Kult Big Box releases of the classic Italian horrors, but some people do like their covers to be in their respective languages.

As a final note I know a 40th anniversary region 1 edition has recently been released. I can't discuss the merits of this one because I haven't seen it, my initial thoughts are of a pseudo special edition release to jump onto the bandwagon for 'Diary's' release, but I managed to track down what features it has, which LOOK fairly impressive, but without viewing .... who knows? Anyone own it?
