Here are my numbers FWIW:

Color - 2950 - 97.6%
B&W - 58 - 1.9%
Mixed - 15 - 0.5%
Colorized - 0 - 0%

My count-as confuses things (not especially consistent), so all numbers are approx.
Add to that, the three colourised profiles are also counted in the B&W count (they contain B&W versions plus the colourised version). As the statistics also hint at, I have four profiles that count as both B&W and colour (mixed content collections).

Colour - 541 - 87.1%
B&W - 81 - 13.0%
Colourised - 3 - 0.48%
Mixed - 3 - 0.48%

You can run a graph of colour, and the totals show up on the legend. Then it's a matter of doing the calculations based on your total number of profiles.

Alternately, you can filter each of the "colour types" individually from your collection.

I only watch two or three a week but buy more than that, so the answer in my case is I don't.  It's medical...

When I watch one I find myself compelled to do a full audit of everything afterwards, plus collect all the extra ‘local database’ stuff I like to keep, which includes the stunt-people and the details of the music used in them; (the one I did tonight had 27 songs in it, so it takes quite a while sometimes).  Then I have to scan and edit the cover to use as part of my screensaver, regardless of whether I need to contribute it or not.  Then I have to write a review which I put on my blog, which basically isn't much of a review at all, as it's mostly me moaning about life in general and trying to link it to the last film I watched.  Then I have to rip or otherwise find a copy of the trailer, so I can upload it to YouTube and link it to my blog; the trailers normally need editing to make them sound or look better too.  Then I have to update my profile on IMDB.  Then I have to add it to my profile on Criticker and add a mini review there too.  Then I have to post my blog and YouTube trailer to my Facebook account.  Then I have to update my links in Profiler, to include the trailer, my blog and IMDB.  Then I go to bed.  Oh, I also have a habit of before watching the film, of reading the Overview out aloud to myself in a suitable cinematic way.  Depending on the type of film I'm watching, I adjust the background lighting in the room to match the tone of the film too.  Happy films get a warm yellow, horrors have a gloomy green, etc.  The method I use to randomly decide which film to watch each time and the rules I’ve invented to control this process, is a story for another day...

What do you mean by "watching them"?
