So I got a new surround sound system that has 7.1, but I have question.  Outside of HD movies, what DVDs do you know that are 7.1 (specifically action, horror, sci-fi)?

I found just in my collection only some EX Digital audio and I 'believe these are encoded for 7.1  if not 6.1  but either way these titles and others like them should give you pretty good bang for your buck ..
I was too tired to type them out or figure out how to copy and paste from a simple report .. so here you go.. A few titles to look over.

None! 
DVD only goes up to "6.1". Dolby Digital EX with the Surround-Center matrixed into Surround-Left and -Right and DTS ES with either matrixed or discrete Surround-Center. With your 7.1 Setup, both Surround-Center will simply output the same signal.

As for DVDs, out of my 650 titles there are 20 titles with either DTS ES or DD EX or both:

The UK OldBoy is DTS-ES I believe and it has an astonishing soundtrack. Especially the opening scenes on the rooftop. Very meaty and uses all the channels brilliantly.
